The Most Beautiful Summer Chicken Dinner


Summer is cherry season, and here in Utah we are lucky to have an abundance of beautiful sweet cherries and other stone fruits throughout the warmer months. While cherries are wonderful eaten fresh or baked into pies and galettes, they become something especially magical when paired with savory ingredients.

In this rosemary cherry chicken, fresh cherries simmer down with balsamic vinegar into a rich sweet-savory sauce that feels rustic, elegant and surprisingly comforting. If you have never cooked fruit with roasted meats before, let this recipe be your introduction โ€” the combination is absolutely irresistible.

As the chicken roasts, the woody rosemary mingles with the sweetness of the cherries and the deep acidity of the balsamic vinegar, creating an aroma that fills the kitchen with something warm, herbaceous and almost fairytale-like. Add in buttery caramelized shallots and crispy golden chicken skin and you have a dinner that feels far more impressive than the effort required to make it.

One of my favorite things about this recipe is how simple it is. Everything roasts together in one pan using fewer than ten ingredients, making it perfect for both casual summer dinners and cozy gatherings with friends.

When roasting chicken, I almost always reach for chicken thighs. They are inexpensive, deeply flavorful and far juicier than chicken breast thanks to their rich dark meat. If I can find whole chicken legs with both the thigh and drumstick attached, even better. Roasted until golden and nestled into the bubbling cherry balsamic sauce, they become incredibly tender and delicious.

This rosemary cherry chicken is the perfect balance of rustic comfort and elegant summer flavor. Juicy chicken thighs roast alongside sweet cherries, caramelized shallots, balsamic vinegar and fresh rosemary until everything becomes rich, glossy and deeply flavorful. The cherries soften into a sweet savory sauce that pairs beautifully with the crispy golden chicken, creating a simple one-pan dinner that feels both cozy and impressive.

  1. Preheat oven

    First, preheat your oven to 400ยฐF ย (204ยฐC)

  1. Prepare and marinate the chicken

    Combine and whisk together the honey, balsamic vinegar, olive oil, one large chopped shallot, 2 sprigs of chopped rosemary, salt and pepper in a bowl large enough to place the chicken thighs in. Marinate the chicken for one hour (or if you do not have time, as long as it takes to pit the cherries and preheat the oven will be just fine, it will still taste delicious!)

  1. Pit the cherries then peel and cut the rest of the shallots in half. When the oven is preheated, place the chicken thighs in a large cast iron pan and nestle the cherries, and shallots around and between them. Drizzle the rest of the marinade over everything. And place in the oven for 45 minutes. I like to turn the heat up to ยฐ425 at the last 5 minutes for a skin that is a bit crispier.

  1. Towards the end, keep an eye on the chicken. Every oven is a bit different. Some run hotter and some need a bit of extra time โ€“ watch closely and adjust accordingly. Since my oven is a bit weaker, I need to cook them for more time. After removing from the oven, let them sit for ten minutes to cool down and absorb the juices. Then serve with a generous scoop of the caramelized shallots and cherries and enjoy!
