For this version, I made a few simple swaps that keep all of the flavor while relying on ingredients I almost always have on hand.
Instead of traditional candied walnuts coated in refined white sugar, I toss mine with pure maple syrup and a generous spoonful of cinnamon before roasting them in the oven. Serve it alongside grilled chicken, roasted salmon, or simply with a warm piece of crusty bread.
Preheat the oven to 375°F (190°C).
Toss the walnuts with the maple syrup, cinnamon, and a pinch of flaky salt if using. Spread them onto a parchment-lined baking sheet and bake for 8–10 minutes, stirring once halfway through, until fragrant and lightly toasted. Allow them to cool completely—they'll become crisp as they cool.
Whisk together the olive oil, balsamic vinegar, Dijon mustard, maple syrup, salt, and pepper until smooth and emulsified. Taste and adjust the seasoning if needed.
Arrange the spinach in a large serving bowl or platter. Scatter over the cherry tomatoes, sliced plums or peaches, crumbled gorgonzola, and cooled candied walnuts.
Drizzle with the balsamic vinaigrette just before serving and gently toss until everything is lightly coated.
