In my opinion, walnuts are one of the most underrated nuts for baking. Rich, buttery, and wonderfully creamy, they have a subtle earthy bitterness that keeps desserts from becoming overly sweet. That mellow, woodsy flavor pairs beautifully with pure maple syrup, creating a pie that feels warm, rustic, and incredibly comforting.

Chill Your Pie Crust

A well-chilled crust holds its beautiful crimped edges much better in the oven and bakes up flakier. If your kitchen is warm, pop the assembled pie into the refrigerator for 20โ€“30 minutes before baking.

Don’t Overbake

The biggest secret to a silky maple custard is knowing when to pull the pie from the oven. This maple walnut pie is everything I love about a classic nut pieโ€”but with a richer, silkier filling made from pure maple syrup instead of corn syrup. Toasted walnuts add warmth and crunch while browned butter deepens the caramel notes. The result is a beautifully balanced pie that isn't overly sweet, allowing the flavor of real maple syrup and buttery walnuts to shine.

Maple Custard Filling

Walnut Glaze (Optional but Recommended)

Instructions

  1. Prepare the crust. Roll your pie dough into a 9-inch pie plate, crimp the edges, and refrigerate while preparing the filling.
  2. Toast the walnuts. Preheat the oven to 325ยฐF (163ยฐC). Spread the chopped walnuts and walnut halves on a baking sheet and toast for 8โ€“10 minutes, until fragrant. Allow them to cool completely.
  3. Brown the butter. Melt the butter over medium heat. Continue cooking until the milk solids become golden brown and smell nutty, about 3โ€“5 minutes. Remove from the heat and let cool for a few minutes.
  4. Make the filling. In a large bowl, whisk the eggs until smooth. Whisk in the maple syrup, heavy cream, browned butter, palm sugar, vanilla, cinnamon, nutmeg, and salt until fully combined.
  5. Fold in the walnuts. Stir the chopped toasted walnuts into the filling.
  6. Fill the crust. Pour the filling into the chilled pie crust. Arrange the walnut halves decoratively over the top.
  7. Protect the walnuts. Mix together 1 tablespoon melted butter and 1 tablespoon maple syrup, then lightly brush the exposed walnut halves.
  8. Bake. Place the pie on the lower-middle oven rack. Position an empty baking sheet on the rack above to soften the direct top heat. Bake for 50โ€“60 minutes, beginning to check the pie around the 50-minute mark.
  9. Look for the perfect bake. The edges should be fully set and lightly puffed, while the center should still have a gentle 2-inch wobble when the pie is nudged. It should not be completely firm when it comes out of the oven.
  10. Cool completely. Let the pie cool on a wire rack for at least 4 hours before slicing. The custard will continue to set as it cools.
