Lately I have been completely captivated by shades of orange. Papayas, carrots, sweet potatoes and now cantaloupe. There is something about that warm sunset color that feels alive, joyful and full of possibility.

That being said – Let the orange theme continue!

Summer is here and that means melon salads. Cantaloupe is such a lovely fruit. It is mellow, juicy and floral with a soft almost nectar-like sweetness. Unlike papaya, whose color burns bright like a tropical sunset, cantaloupe wears a softer shade of orange โ€” delicate, peachy and reminiscent of a creamsicle.

Paired with my bright yellow lemon curd and deep green mint, this salad is every bit as beautiful as it is delicious. The colors alone make it feel like summer on a plate.

Sweet cantaloupe wedges are draped with silky prosciutto, scattered with toasted hazelnuts and nestled into a generous swoosh of homemade lemon curd. A drizzle of olive oil brings everything together, creating a combination that somehow feels rustic, elegant and effortless all at once.

  3. Spread a generous spoonful of the lemon curd mixture onto a serving plate.
  4. Arrange the cantaloupe wedges into a loose tower or layered stack over the lemon curd.
  5. Tuck pieces of prosciutto between the melon wedges.
  6. Scatter fresh mint leaves throughout the salad.

  8. Finish with flaky sea salt, freshly cracked black pepper and a light drizzle of olive oil.

Note

The quality of the cantaloupe matters here. Choose a melon that feels heavy for its size and smells sweet and floral at the stem end.

If your lemon curd is very thick, add an extra teaspoon of olive oil to loosen it slightly.

For the best presentation, leave some mint leaves whole rather than chopping them. The bright green leaves create beautiful contrast against the peach-colored melon.
